I’m back from my week-long vacation and will get going with regular posts again. For today, I wanted to tell you about what I had for breakfast. This recipe is inspired by Norman Walker’s favorite breakfast meal, and I added a few things to it. This can obviously be tweaked and added to based on what you have in the house, and it’s a light yet filling meal that can easily keep you full until lunchtime.
1 or 2 ripe bananas (preferably already browning on the outside)
1 grated carrot
a handful of chopped or crushed raw almonds
a handful of organic raisins
a tablespoon of raw cacao nibs (can be bought at Whole Foods)
a dash of cinnamon.
Mash up or finely chop the bananas in a bowl. Add the remaining ingredients and stir together. Eat.
