Last night when I got home I was tired from a long day at work and didn’t want to put too much thought into what I was going to have for dinner, so I just grabbed a bunch of stuff out of the fridge and made myself a meal. It ended up being pretty awesome so I figured I’d share it with you. Here’s what I had:
Oven-Baked Brussels Sprouts:
My buddy Greg was telling me about this recipe (although I think he puts bacon or pancetta in it) but it seemed worth a try. It worked out really well.
I took some fresh brussels sprouts (I bought them a couple days ago for this purpose especially), peeled the leaves off until the bud was pretty small, and threw all the leaves and buds into a bowl.
Then I spread it out on a baking sheet and baked it at 450 degrees for about 6 minutes.
Good lord it was delicious – the buds were tasty and the leaves were crispy.
Random Stir-Fry With Stuff in My Fridge:
Here’s what I put in there: Seitan, Baby Portobella Mushrooms, Spinach, Chopped Carrots, Lentils, sesame seedsgarlic a and a little bit of coconut oil.
I heated up some coconut oil first (on medium-low heat), threw some minced garlic in there, and sauteed the seitan for a couple minutes.
Then I threw the chopped mushrooms and carrots in there, added a little bit of ponzu sauce from the fridge, and let that cook for a few more minutes.
Then I put the lentils in (pre-steamed from Trader Joes), added some spinach, and waited until it wilted, and added the sesame seeds.
DONE. Ate it. It was delicious. Girlfriend liked it too. Get a wok if you don’t have one. I got one at IKEA for about 6 bucks.
