Sometimes you put an incredible amount of planning and effort into a dinner and it doesn’t turn out so great, and other times, you just throw a bunch of crap in a bowl and it comes out fantastic. This past Monday night was one of the latter times. I was exhausted after the long weekend and didn’t want to go anywhere, nor did I want to put much effort into cooking. Luckily I had a bunch of fresh produce in my fridge from the Oxnard Farmer’s Market I went to on Sunday. So here’s what I whipped up.
I took some mixed baby greens, threw it in the bottom of a bowl. Then I took half a bag of the “cooking greens” from Trader Joes (I think its collard, turnip, mustard greens etc.) and steamed them for a couple of minutes, threw it in the bowl. Then I chopped up some heirloom tomatoes, threw them in. Next came some sunflower sprouts I saw at the farmer’s market. In to the bowl they went. Next up was half of a chopped jalapeno for a little kick. Then I put together my typical quick dressing of a little tahini, the juice of 1 lemon, a little tamari, and some apple cider vinegar. Unbelievably satisfying and it took me all of 6 minutes to put together. I love the combination of raw salad greens mixed with cooked greens. Anyone else have some similar meals lately?
