If someone told me a year ago that I had to eat food that had no meat, dairy, oil, sugar, or salt, I’d probably have punched them in the face. I’m sure a lot of you have felt or still feel this way. Well obviously I’ve had a fine time doing without the meat and dairy for quite a while now, and I don’t miss it at all. The oil and salt, though, are things I’d never thought I’d be able to omit from a delicious meal. But Chef AJ has shown me how to do it. I’ve taken a couple of classes with her now, and if you live in LA, I’d highly recommend signing up for one.
AJ teaches out of her home in Sherman Oaks, and it’s an incredibly relaxed and friendly atmosphere. She’s hilarious and makes cooking fun, and her recipes are really doable – things you can make over and over and over again. A former pastry chef, she makes some of the most delicious desserts you’ll ever taste, and although some of them may have a lot of calories, they are certainly less calorically dense than your standard desserts and they don’t contain any refined sugar or even sugar substitutes. The only sweeteners she uses are dates – blended dates or date syrup, which is also super easy to make yourself.
