Trying to eat healthily while traveling can be a real bitch, especially if you get stuck in an airport with a delayed flight, which seems to happen far to often these days. If you happen to be stuck in Chicago O’Hare like I was last week (actually I was stuck there twice – once on the way to Italy and once on the way back), you’ve actually got some pretty fantastic plant-based and healthy options. I’m not sure how long it’s been there, but there’s a convenience food store called Cibo in the American Airlines terminal (I think it’s terminal 3). The wife and I stumbled on it because there was a sign outside of it advertising vegan options, and oh my was it impressive! Kale salad, a soutwestern tofu wrap, vegan eggplant parmesean, and a vegan taco salad, among other healthy options. Not only are they delicious, but they’re easy to carry on to your flight so you can avoid crappy airline food. I was amazed. I hope this trend catches on with other airports. Anyone know of other airports that have stuff like this?
