Hey everyone! Day 2 went pretty smoothly, although this morning I feel like I’m fighting off some sort of bug. Don’t know if it’s a symptom of detoxification or just because it’s that time of year, but I’m definitely not feeling 100% today. Here’s my food log from yesterday.
Breakfast -Pint of fresh juice with spinach, cabbage, carrot, apple. I know to some of you this might sound disgusting, but if you’ve never made fresh juice, you should try it. Put anything in the juicer and throw an apple in at the end and it comes out tasting good.
Mid Morning Snack – I went to Trader Joes in the morning and picked up some pre-cut fruit to tide me over during the day at work. Bought a box of sliced cantaloupe, a box of sliced mango, and a box of blueberries. 15 minutes later they were all gone. I crushed them. Whoops.
Lunch: Lunch wasn’t so different from what I normally do – a big juice with green vegetables – romaine, celery, cucumber, ginger, and apple, and a big salad with all different kinds of veggies – kale, chard, spinach, radishes, cauliflower, sweet peas, mushrooms, and carrots. I had about 2 1/2 plates full.
Afternoon Snack: Definitely feeling a dip in energy this afternoon, but not as hungry as I thought I would. Been munching on a couple persian cucumbers. Made my usual Green Lemonade with my co-worker. It never gets old, it’s so good and addictive – it’s the healthy version of crack.
Dinner: Energy levels have been way up since my juice, but still I didn’t feel like getting too fancy for dinner. I water sautéed some artichoke hearts, asparagus, shitake mushrooms, broccoli, and kale, and covered it in some oil-free tomato sauce. Finished off my dinner with a couple satsuma tangerines. Always love this time of year when they’re available.
