Here’s a video and article from Mark Bittman in the New York Times about a new meat substitute product that’s supposed to blow all the other products away in terms of taste, simplicity of ingredients, and price, and also stacks up favorably to chicken in blind taste tests. I’m not a big fan of fake meat products, but if this stuff gets people to eat less chicken, I’m all for it. Full disclosure, a vegan chef friend of mine who will remain nameless was working on this product several months ago and let me taste some of it, and as a former meat eater, I can tell you the texture was pretty spot-on. I’ll bet it would work as a substitute for pulled pork as well.
