As promised, here’s Sammy Foxworth’s Performance Mix aka the “feeding trough” that he always has on hand in his fridge. I made a slight variation of this over the weekend (I used a brown/wild rice mixture). Not only is this easy to make, it’s really cheap, tastes delicious, and is as about as healthy as you can get. Be careful though, this makes a LOT of food, so if there’s not many people in your household, you should probably cut this recipe in half at least.
12 cups Water
1 14- or 16-oz bag of Dried Lentils
2 bags Frozen Peas & Carrots
1 bag Frozen Corn
2 bags Frozen Broccoli
1 bag Frozen Lima Beans
Add all ingredients to pot. Heat to boiling, turn down the heat between med-low and medium and cook about 40 minutes, or until lentils and vegetables are done. Cook the rice (POT 2) , then mix the ingredients of both pots together, along with the salsa.
4 cups Jasmine Rice
7 1/3 cups Water
3 or 4 24-oz jars of Pace Salsa or Picante Sauce
Add rice and water to a pot. Heat to boiling over med-high heat. Turn down heat and cover. Cook between med-low and medium for about 15-20 minutes until all water has been absorbed.
After rice is done, stir in the salsa.
